People often ask, what’s your favorite pizza place? When I think of pizza I don’t think of any single pizza as the greatest, but I think of all the bad pizzas, pizzas that gave me heartburn, mediocre pizzas, decent pizzas, good pizzas, and the great pizzas.

What is Panuozzo?

Panuozzo is a traditional Italian street food sandwich made from fresh, long-fermented pizza dough that is stretched, baked, sliced open, and stuffed like a panini. Invented in Gragnano, Italy, in 1983, it features a crisp, lightly charred crust with a soft, airy interior.

What is Neapolitan inspired pizza?

Neapolitan pizza (Italianpizza napoletanaNeapolitanpizza napulitana) is the version of the round pizza typically prepared in the Italian city of Naples and characterised by a soft, thin dough with high edges.[1] The tomatoes are traditionally either San Marzano tomatoes or pomodorini del Piennolo del Vesuvio, which grow on the volcanic plains to the south of Mount Vesuvius.

We call our pizza Neapolitan “inspired” because we break a few rules. We cook at 750 degrees for two and a half minutes vs 90 seconds, and we use low moisture whole milk mozzarella vs traditional high moisture Italian mozzarella. This results in a pizza with less flop than tradition, but still retaining many traditional qualities of Neapolitan such as an overall softness with a slight crunch to the exterior.
